This is the showiest of Amaranth types, with very large heads of drooping, crimson flowers. The red color is due to the content of betacyanins, and the leaves are an edible and tasty potherb when picked young. The seeds are blonde and edible, a pseudo-grain that is one of the better self-sufficiency foods on the farmstead. Makes a delicious morning gruel or can be pan-fried into tiny popcorns. Plant prefers full sun and regular garden soil. Direct seed in the spring garden. Press in, keep evenly moist and in the light. Thin to 2 feet apart.
