Roots selected for smooth skin, a round shape, minimal root hairs, and a very fine taproot. Tops are compact, but exceptionally strong, thus ideally suited for bunching. Zeppo is also our recommendation for baby beets, producing perfectly proportioned roots at a small size, with short tops to match. Our most refined beet.
